MUSTARD SAUCE (English recipe)
Melt 2 tablespoons butter in a small saucepan, then blend in 2 tablespoons flour and mix well. Next pour ¼ litre milk, beat, and leave to cook over a brisk heat until the sauce thickens. Lower the heat and simmer for 3 minutes, then add 4 tablespoons fresh cream, 1 teaspoon white vinegar, 1-teaspoon English mustard powder, some salt, and a little pepper. Serve immediately with poached fish.
