VINAIGRETTE (from Raymond Olivers recipe)

Put a little salt into a bowl and dissolve it in 1 tablespoon vinegar (salt does not dissolve in oil); add 3 tablespoons oil and some pepper. Mix well. The vinegar may be replaced by another acid substance, such as lemon, orange, or grapefruit juice, in which case the mixture is half juice, half oil. The oil may also be replaced by fresh cream.

Other flavourings, such as herbs, mustard, or garlic, may be added to taste. The mixture may also be placed in a screw-top jar and shaken vigorously to form an emulsion.
