PEACH SAUCE II (Recipe)



Prepare some peaches pure as in previous recipe. Put the pure into a heavy-based saucepan together with half its weight of sugar, and cook over a brisk heat for 7-8 minutes, stirring continuously. Allow cooling, then flavouring with a fruit liqueur, according to taste.

This sauce is used particularly for pouring over rice or semolina desserts.
