GNOISE SAUCE ( SAUCE GNOISE) (Recipe)



Pour into a saucepan 2 glasses red Bordeaux wine. Add 2 tablespoons fines herbes (consisting of mushrooms, truffles, parsley, and 2 shallots, all blanched and chopped), a small pinch of quatre-pices (four spices), and a pinch of finely ground pepper. Boil down almost completely; add 2 tablespoons consomm, 2 ladles ESPAGNOLE SAUCE, and 1 glass Bordeaux wine. Boil down to the desired consistency and transfer the sauce to a bain-marie. Blend in a little Isigny butter just before serving.
