VINAIGRETTE SAUCE
A cold sauce made from a mixture of vinegar oil, pepper, and salt, to which various flavourings may be added shallots, onions, herbs, capers, garlic, gherkins, anchovies, hard-boiled egg, mustard etc.
VINAIGRETTE is used especially for dressing green salads. The choice of the oil (olive, sunflower, walnut, etc) and vinegar is made according to the nature of the salad; the vinegar may be replaced by lemon juice or is sometimes flavoured with it. VINAIGRETTE is also used to dress various other cold dishes vegetables (tomatoes, asparagus, cauliflower, leeks, artichoke hearts, etc.)
