BLACKCURRANT SAUCE (Recipe)
Put 10 lumps of sugar into a saucepan with ½ glass water. Heat to dissolve the sugar and then boil to make syrup. Wash 250 g blackcurrants in cold water, wipe them, and reduce to a pure in a blender or food processor. Rub the pure through a fine strainer. Mix the syrup with the fruit pure and add the juice of 1 lemon. Pour the sauce into a bowl and chill in the refrigerator.
Chilled blackcurrant sauce can be served with baked apples, floating islands, pineapple water ice, or fruit salad. It can also be served hot with a rice dessert, apple charlotte, or cold lemon mousse.
Blackcurrant sauce can also be made quickly by mixing 5 dl blackcurrant cordial with 2-3 liqueur glasses of raspberry or plum brandy. A generous handful of whole blackcurrants may be added if in season. This sauce can be used to pour over sorbets or ice creams sundaes.
